The Pastry Sous Chef reports directly to the Executive Sous Chef and Executive Chef. This individual oversees the production of baked goods and pastries for the bar, 3 meal restaurant, market, regency club, and banquet operation. They are responsible for the overall success of the pastry department. Other responsibilities include managing the pastry team, writing the department schedule, ordering, writing prep lists, and menu conceptualization. The Pastry Sous Chef will also have a say in employee selection, be responsible for the training and development of the team, and manage performance counseling. 

Qualifications

  • A true desire to satisfy the needs of others in a fast-paced environment.
  • Ability to effectively communicate and lead a team in a fast-paced environment.
  • Culinary degree or minimum of three years related high volume kitchen experience leading a team is required.
  • Ability to perform at a high level unsupervised and motivate the team in new and creative ways
  • Ability to uphold a high level of standards in baking and pastry.
  • Desire to continue to push the envelope in new and exciting ways to keep the operation at the forefront of what is new and exciting in baking and pastry
  • A self-starter
  • Must be able to work a flexible schedule; including morning and afternoon shifts with weekend and holiday availability
  • Leader and Teacher
  • Capable of producing a consistent product in a timely manner
